Beef Goulash
Portion Size: 1 cup (1/2 cup pasta ½ cup meat mixture)

2 1/2 Pounds beef stew meat | Trim all visible fat. Cut into ½ inch pieces. |
1 teaspoon salt | |
1/4 teaspoon black pepper. | |
2 tablespoon olive oil | |
1 cup onion, chopped | Wash, peel and dice. |
1 cup green bell pepper | Wash, trim and slice. |
1 cut tomato sauce | |
1 cup reduced sodium beef broth | |
1 tablespoon paprika | |
2 tablespoons flour | |
1 lb. pasta | Tip: use whole grain pasta |

1 | Heat 1 tablespoon oil. Brown meat on all sides in a large skillet over medium high heat. | |
2 | Add onions and sauté until transparent. | |
3 | Add tomato sauce, broth, green pepper, salt, flour and paprika. | |
4 | Cover the pot and simmer the meat for 1 1/2 hours. In a small sauce pan, melt remaining olive oil and stir in flour. Slowly add flour mixture to sauce. Cook until thickened. | Temperature check. Minimum Temperature 165°F for 15 seconds |
5 | Prepare pasta according to directions on package. | |
6 | Serve pasta topped with meat mixture. Serve hot. |
