Beef Goulash

Portion Size: 1 cup (1/2 cup pasta ½ cup meat mixture)

Ingredients: Yields: 8 servings

Ingredients Notes: 
2 1/2 Pounds beef stew meatTrim all visible fat. Cut into ½ inch pieces. 
1 teaspoon salt
1/4 teaspoon black pepper. 
2 tablespoon olive oil
1 cup onion, choppedWash, peel and dice.
1 cup green bell pepperWash, trim and slice. 
1 cut tomato sauce
1 cup reduced sodium beef broth
1 tablespoon paprika
2 tablespoons flour
1 lb. pastaTip: use whole grain pasta
For gluten free (GF): Use GF beef broth, GF pasta and GF flour. Always check each ingredient to be sure it is gluten free.

1Heat 1 tablespoon oil. Brown meat on all sides in a large skillet over medium high heat.   
2Add onions and sauté until transparent.  
3Add tomato sauce, broth, green pepper, salt, flour and paprika.  
4Cover the pot and simmer the meat for 1 1/2 hours.  In a small sauce pan, melt remaining olive oil and stir in flour.    Slowly add flour mixture to sauce. Cook until thickened.Temperature check. Minimum Temperature 165°F for 15 seconds
5Prepare pasta according to directions on package.
6Serve pasta topped with meat mixture. Serve hot.
