Buffalo Chicken Burgers

1 cup breadcrumbs | |
2 tablespoons canola oil | |
2 eggs | |
1 teaspoon Italian seasoning | |
2 tablespoons Parmesan cheese | |
8 Slices Cheddar(1 oz.) | May use other low-fat sliced cheese |
1 lb. ground chicken | |
¼ cup low fat blue cheese or low-fat ranch dressing | |
2 Tablespoons buffalo wing sauce plus more as desired. | |
8 Hamburger Buns | Whole wheat preferred or white |
1 cup shredded lettuce | Washed, trimmed and shredded. |

1 | In a bowl, combine ground chicken, breadcrumbs, egg, Italian seasoning, Parmesan cheese, 2 Tablespoons buffalo wing sauce and egg. Divide into 8 servings and form into patties. | |
2 | Heat a large skillet, heat oil. Cook chicken patties over medium high heat. Cook until golden brown and then turn until both sides are golden brown. Brown on each side and remove from heat. Add cheese while burger is still hot. | Cook until internal temperature reaches 165 degrees F. |
3 | To assemble, Add burgers with cheese on hamburger bun and drizzle with ranch dressing or blue cheese dressing. Top with buffalo wing sauce as desired. Add lettuce and top bun. | |
4 | Repeat until 8 burgers are made. Serve immediately |
