Chef Salad

Portion Size: 1 cup lettuce, 3 oz meat, 1 egg, ½ cup vegetables, 2 T. salad dressing

Ingredients: Yields: 8 servings

Ingredients Notes: 
8 Cups torn lettuceWash, trim and divide onto plates
8 Ounces sliced cooked hamMay use deli meat
8 Ounces sliced cooked turkeyMay use deli meat
8 Ounces sliced lowfat cheese 
8 Hard Cooked eggsSliced
3 Medium tomatoes, cut into wedgesWash, trim and cut into wedges 
1 Medium bell pepper, cut into ringsWash, remove seeds and cut into rings
1 Medium onion Wash, peel and sliced thin
1/2 Cup seasoned croutons Optional
Light or low fat Salad dressing of choice (see recipes in cookbook)
For gluten free (GF): Use GF croutons and GF salad dressing.  Always check each ingredient to be sure it is gluten free.

1In a large bowl tear lettuce.
2Arrange ham, turkey, cheese, eggs, tomatoes, bell pepper, and onions on lettuce. Sprinkle with Croutons, if desired. Pour over dressing. Toss to coat. Serve.
