Chicken Parmesan Sandwiches

Ingredients: Yields: 8 servings

Ingredients Notes: 
8 (3 oz.) Boneless skin less chicken breasts Trim all visible fat and skin
1 cup all-purpose flour 
2 large eggs
1 cup seasoned breadcrumbs
¼ cup grated Parmesan cheese 
8 Small Italian rolls or hamburger buns 
1 cup marinara sauce 
8 slices Provolone cheese 
For gluten free (GF): Use GF flour, GF breadcrumbs, GF rolls and GF marinara sauce.
Always check each ingredient to be sure it is gluten free

1In 3 separate shallow dishes, add flour to one, eggs to another and then breadcrumbs into the 3rd.  Stir Parmesan into bread crumb mixture. Beat eggs. 
2Pound chicken with a mallet to ½ inch thickness; Dip chicken flour and coat both sides; shake off excess. Dip in egg, then in crumb mixture.
3In a large skillet heat oil over medium heat. Add chicken; cook until golden brown and chicken is no longer pink. Cook until internal temperature reaches 165°F.
4Heat marinara sauce in microwave until hot. 
5To assemble, place 1 chicken breast on bun. Top with marinara sauce and then cheese. Serve warm.
