Chicken With Pineapple Salad Sandwiches

Portion Size: 1/3 cup on 2 slices bread

Ingredients Notes: 
3 cups cooked chickenTrim all visible fat and skin
1/2 cup celery, dicedWash, trim and dice
½ crushed pineapple, drained
1/2 cup light mayonnaise
1 teaspoon curry powder
1 tablespoon red onion Wash, peel and minced 
16 slices breadOptional: use whole wheat or raisin bread
8 lettuce leavesWash and trim
16 tomato slicesWash, trim and slice

1Mix chicken, celery, mayonnaise, curry powder, and onion.  
2Divide 1/3 c. serving evenly on eight sandwiches.
