Citrus Parmesan Dressing

2 tablespoons chopped shallots or minced red onion | Washed, peeled and minced |
1/2 cup extra-virgin olive oil (or half reg. + half lemon oil) | |
2T white wine vinegar | |
½ teaspoon salt | |
¼ teaspoon pepper |
