Cranberry Citrus Salad with Chili Vinaigrette

Portion Size: 1 cup

Ingredients: Yields: 8 servings

Ingredients Notes: 
8 cups chopped fresh Romaine lettuceWashed, tough stems removed and torn into bite size pieces
2 cups pink grapefruitWashed, peeled, membranes removed and diced 
2 cups orangesWashed, peeled, membranes removed and diced
1/3 dried whole cranberries
¼ cup red onionWashed, peeled and thinly sliced
Dressing
3 Tbsp. olive oil
¼ cup lime juice
dash chili powder
¼ teaspoon salt
¼ teaspoon black pepper
2 tablespoons white sesame seeds
1 teaspoon honey

1In a small bowl, whisk together dressing ingredients.
2On serving plates, arrange lettuce. Top with oranges, grapefruit, cranberries, and onions. 
3Just before serving whisk dressing and drizzle over salad. Serve immediately.
