Hawaiian Chicken Salad
Portion Size: ½ c. chicken mixture, 1cup lettuce

1-pound cooked chicken, cubed | Trim all visible fat and skin |
1/2 cup light mayonnaise | |
1 teaspoon salt | |
1 cup pineapple tidbits, packed in 100% juice | Do not drain |
½ cup raisins | |
1/4 cup blanched slivered almonds, toasted | Unsalted |
8 cups shredded lettuce | Wash, trim and shred. |

1 | In a large bowl, toss the chicken with lettuce. | |
2 | Mix the mayonnaise, salt, pineapple, raisin, and almonds. | |
3 | Serve ½ cup chicken mixture on top of 1 cup lettuce. | |
