Jicama and Grapefruit Salad (Variation: Jicama and Orange Salad)

Portion Size: 1/2 cup

Ingredients Notes: 
1 Large red grapefruit or orangeCut the grapefruit into segments, removing any membranes and seeds.
1 Medium JicamaPeeled, washed, and diced
1 Red bell pepperWashed, trimmed and diced
1 Orange bell pepperWashed, trimmed and diced
1 English CucumberWashed, trimmed, and diced
4 green onionsWashed, trimmed and chopped
1/4 cup Fresh cilantroWashed, trimmed and chopped
2 limes
Dash of cayenne pepper
Salt and Pepper to taste

1Cut the grapefruit into segments, removing any membranes and seeds.
2In a large bowl, combine, grapefruit (or orange), jicama, red pepper, orange pepper, and cucumber.
3Remove zest from limes and add to bowl.
4Add the juice from the limes to the bowl.
5Add Cayenne pepper. Gently stir. Season with salt and pepper.
6Top with green onion and cilantro. Chill
