Pineapple Bars

Portion Size: 2” x 2” square

1 cup (8¼ ounce can) crushed pineapple with juicePacked in 100% fruit juice
1 cup sugar
3 tablespoons cornstarch
¾ cup plus1 tablespoon margarine
1 cup water
1 cup packed brown sugar
1¾ cup flour
1 teaspoon baking soda
1 teaspoon salt
2 cups rolled oats
For gluten free (GF): Use GF all-purpose flour, GF rolled oats and GF baking powder.  Always check each ingredient to be sure it is gluten free.

1In a sauce pan combine 1 cup crushed pineapple and juice, 1 cup sugar, cornstarch margarine and 1 cup water. Cook until thickened.  
2Remove from heat and cool.
3Preheat oven to 400°F. 
4Cream together shortening and sugar thoroughly.  Stir in flour, baking soda, and salt.
5Mix in rolled oats.
6Press and flatten half of the mixture over bottom of a 13 X 9 ½ inch greased pan.  Spread with cooled filling.  Top with remaining crumb mixture, patting lightly.
7Bake 25 to 30 minutes or until lightly browned. While warm cut into bars and remove from pan.Cook until internal temperature reaches 165°F for 15 seconds.
