Pizza Casserole

Portion Size: 1 cup

Ingredients: Yields: 8 servings

Ingredients Notes: 
2 pounds lean ground beef 
1-12 oz. Package macaroni May use whole grain
1/4 cup diced onionWash, peel and dice
2 tablespoons olive oil
2 cups small curd low fat cottage cheese 
1/4 cup grated low fat Parmesan cheese 
1-12 oz. can low sodium pizza sauce 
8 oz  fresh mushrooms 
1 teaspoon oregano
1 1/2 teaspoon salt 
1 cup light sour cream 
For gluten free (GF): Use GF macaroni and GF pizza sauce. Always check each ingredient to be sure it is gluten free.

1Cook macaroni, rinse and drain.
2Sauté onion in olive oil until transparent.
3Add beef and brown, then combine meat with remaining ingredients and mix with macaroni.
4Pour into baking dish.
5Sprinkle with additional Parmesan cheese. 
6Bake at 350 degree for 45 to 60 minutes.Cook until internal temperature reaches 165 F degrees for 15 seconds
