Pizza Casserole

| 2 pounds lean ground beef | |
| 1-12 oz. Package macaroni | May use whole grain |
| 1/4 cup diced onion | Wash, peel and dice |
| 2 tablespoons olive oil | |
| 2 cups small curd low fat cottage cheese | |
| 1/4 cup grated low fat Parmesan cheese | |
| 1-12 oz. can low sodium pizza sauce | |
| 8 oz fresh mushrooms | |
| 1 teaspoon oregano | |
| 1 1/2 teaspoon salt | |
| 1 cup light sour cream |

| 1 | Cook macaroni, rinse and drain. | |
| 2 | Sauté onion in olive oil until transparent. | |
| 3 | Add beef and brown, then combine meat with remaining ingredients and mix with macaroni. | |
| 4 | Pour into baking dish. | |
| 5 | Sprinkle with additional Parmesan cheese. | |
| 6 | Bake at 350 degree for 45 to 60 minutes. | Cook until internal temperature reaches 165 F degrees for 15 seconds |
