Pork Chop with Apricot Ginger Teriyaki Sauce
Portion Size: 3 oz. boneless, 5 oz. with bone

| 8 boneless pork chops, ½ inch thick | Trim all visible fat |
| ½ teaspoon black pepper | |
| ¼ cup oil | |
| 1 cup apricot fruit preserves | |
| ½ cup lite soy sauce | |
| 2 teaspoons ginger | |
| ½ teaspoon garlic powder | Or used 2 cloves, minced |
| 3 Tablespoons honey | |
| 2 teaspoons, sesame seeds | |
| ¼ cup chopped green onions (optional) | Wash, trim and slice. |

| 1 | In a large nonstick skillet, heat oil over medium high heat. Brown chops and season with pepper. | |
| 2 | Cook chops on both sides, turning only for about 8-9 minutes total | Cook to 145°F for 15 seconds. |
| 3 | In a small bowl combine apricot preserves, soy sauce, ginger, garlic powder, honey and sesame seeds. | |
| 4 | Whisk thoroughly. Pour sauce over chops and heat until thick and bubbly. Serve chops and pour sauce over chops. Top with green onions. |
