Pork Chop with Mushrooms

Portion Size: 3 oz. boneless, 5 oz. with bone

8 boneless pork chops, ½ inch thickTrim all visible fat
1 teaspoon salt 
½ teaspoon black pepper 
1 tablespoon plus 3 tablespoons olive oil 
¼ cup flour 
12 oz. sliced mushroomsWashed, trimmed and sliced
1 teaspoon thyme 
2 cups low salt chicken broth 
For gluten free (GF): Use GF chicken broth.  Always check each ingredient to be sure it is gluten free.

1Season chops with salt and pepper. 
2Heat 1 T. oil in large skillet over medium high heat. Brown chops, 7-8 minutes per side.Cook until internal temperature reaches 145° F for 15 seconds.
3Remove chops from pan and add flour and 3T. oil. Stir and cook for 1 minute 
4Whisk in chicken broth and bring to boil. 
5Add chops, mushrooms and thyme and simmer 12-15 minutes. Puree mushroom sauce. 
6Serve chops and pour sauce on top.Serve hot.
