Pork Tenderloin with Cranberry Glaze

| 2 lbs. boneless pork tenderloin | Trim all visible fat. |
| 2 tablespoons olive oil | |
| ½ teaspoon salt | |
| 1 teaspoon pepper | |
| 1 can (12 oz.) jellied cranberry sauce | |
| ½ cup orange juice | |
| ¼ cup brown sugar |

| 1 | Pre Heat. Oven to 350 degrees F. Season pork with salt and pepper. Rub on olive oil | |
| 2 | Bake uncovered for 40 minutes. | |
| 3 | In a small saucepan combine, cranberry sauce, orange juice, and brown sugar. Cook over medium heat until cranberry sauce is melted. Drizzle ¼ sauce over roast. | |
| 4 | Bake 20 minutes longer. Baste with sauce every 10 minutes. Let stand for 10 minutes. | Heat to at least 145 degree with 4 minute rest DO NOT OVER COOK |
| 5 | Slice thinly across the grain and serve. Serve with remaining glaze drizzled over slices. |
