Pork Tenderloin with Cranberry Glaze

Portion Size: 3 oz. boneless

Ingredients:     Yields: 8 servings

IngredientsNotes:
2 lbs. boneless pork tenderloinTrim all visible fat.
2 tablespoons olive oil 
½ teaspoon salt 
1 teaspoon pepper 
1 can (12 oz.) jellied cranberry sauce 
½ cup orange juice 
¼ cup brown sugar 
For gluten free (GF): Use GF cranberry sauce.  Always check each ingredient to be sure it is gluten free.

1Pre Heat. Oven to 350 degrees F. Season pork with salt and pepper. Rub on olive oil 
2Bake uncovered for 40 minutes. 
3In a small saucepan combine, cranberry sauce, orange juice, and brown sugar.  Cook over medium heat until cranberry sauce is melted. Drizzle ¼ sauce over roast. 
4Bake 20 minutes longer. Baste with sauce every 10 minutes. Let stand for 10 minutes.Heat to at least 145 degree with 4 minute rest DO NOT OVER COOK
5Slice thinly across the grain and serve. Serve with remaining glaze drizzled over slices.
