Spicy Peach or Pear Salad

Portion Size: 1/2 cup

Ingredients: Yields: 8 servings

Ingredients Notes: 
1/3 cup vinegar
1 stick cinnamon
1/3 cup sugar
8 whole cloves
8 halves of cooked fresh or canned peaches or pearsWashed, pitted and cut in half
1/2 cup light cream cheese or lowfat cottage cheese
1/2 teaspoon cayenne pepper
3 tablespoons light mayonnaise

1Add 1/4 cup water to the vinegar in a sauce pan.
2Add the cinnamon, sugar, cayenne pepper. and cloves, and simmer for 5 minutes. Remove cloves. Remove from heat and stir in mayonnaise. 
3Pour over the fruit and chill.
4Fill centers with cream cheese or cottage cheese.
