Tuscan Soup

Portion Size: 1 cup

Ingredients: Yields: 8 servings

Ingredients Notes: 
½ lb. lean spicy bulk Italian Sausage
¼ cup onionPeeled, washed, and chopped
2 tablespoons olive oil
2 tablespoons  flour
4 cups low sodium Chicken broth
1 (14oz.) can evaporated low fat milk
½ teaspoon  garlic powder
1 cup potatoes, cubedWashed and cubed
2 cups fresh spinach or kale.Washed and chopped

1Cook Italian sausage until brown; drain excess fat. 
2Sauté onion in oil until tender Stir in flour until bubbly.. 
3Mix in broth; bring to a boil. Reduce heat; stir in potatoes, garlic, sausage and evaporated milk. Bring to boil. Reduce heat and simmer for 20 minutes
4Fold in spinach or kale  just before serving.
To make this recipe gluten free: Use GF broth and GF Sausage. Always check all ingredients to be sure they are gluten free.
