Tuscan Soup

| ¼ cup onion | Peeled, washed, and chopped |
| 2 tablespoons olive oil | |
| 2 tablespoons flour | |
| 4 cups low sodium Chicken broth | |
| 1 (14oz.) can evaporated low fat milk | |
| ½ teaspoon garlic powder | |
| 1 cup potatoes, cubed | Washed and cubed |
| 2 cups fresh spinach or kale. | Washed and chopped |

| 1 | Cook Italian sausage until brown; drain excess fat. | |
| 2 | Sauté onion in oil until tender Stir in flour until bubbly.. | |
| 3 | Mix in broth; bring to a boil. Reduce heat; stir in potatoes, garlic, sausage and evaporated milk. Bring to boil. Reduce heat and simmer for 20 minutes | |
| 4 | Fold in spinach or kale just before serving. |
