Beef Tostada (Meatless)

Portion Size: 1/3 c. ground meat, 1/4 c. refried beans, 1 tortilla, ¼ cup  tomatoes and, ½ cup lettuce each.

Ingredients Notes: 
1  Pounds imitation ground beef crumbles
2 Cans fat free refried beans (no lard) 
1 Small can Ortega chili peppers, drained 
2 Cups shredded low fat cheddar cheese For Vegan: Use vegan cheese
2 Cups tomatoes, chopped 
4 Cups shredded lettuce
8 Flour tortillas  ( lard in ingredients, plant based only products) 
Taco sauce (optional) (plant based ingredients only)

1Prepare flour tortillas by frying them in hot vegetable oil until crisp tender, turning once. 
2Drain on a paper towel.
3In a large sauce pan, heat ground beef. Cook until internal temperature reaches 165 F degrees for 15 seconds
4Mix canned refried beans with Ortega chili peppers, heat through.
5Place bean mixture on prepared tortillas.
6Top each with meat and then cheese.
7Top with chopped lettuce and tomatoes.
8Sprinkle with taco sauce.
