Broiled Fish Parmesan

| 2 ½ pounds fish fillets | May use any white boneless fish (cod, halibut, perch, sole, trout etc.) |
| 2 cups light mayonnaise | |
| ¼ cup grated parmesan cheese | |
| 2 teaspoons grated onion | |
| ¼ teaspoon Tabasco hot pepper sauce (optional) |

| 1 | Place fillet in a shallow baking tray . Broil for 5 minutes or less. | |
| 2 | Combine mayonnaise, cheese, onion, and Tabasco; mix well. Spread mixture on fish. Return to broiler. | |
| 3 | Broil until topping is brown, bubbly, and fish flakes easily with a fork . Serve hot. | Cook until internal temperature reaches 145° F for 15 seconds. |
