Chicken and White Bean Soup (meatless)

Portion Size: 1 cup

Ingredients: Yields: 8 servings

Ingredients Notes: 
2 tablespoons oil
1 onionWashed, peeled and diced
1 tablespoon flour
1 tablespoon dried basil 
1 teaspoon garlic powder
½ teaspoon ground oregano
2 lbs. meatless chicken pieces
1 (14.5 ounce) can diced tomatoesUse no added salt variety
6 cups  vegan chicken broth
2 (15oz). can white beansNot drained.
1 (14 oz.) package fresh spinachWashed, trimmed and chopped.

Directions:

Steps:
1In large stockpot, cook chicken and onions in oil. 
2Drain.    
3Add flour, basil, garlic powder and oregano. Stir.  
4Add tomatoes, chicken broth and beans.  Bring to a boil.  
5Reduce heat.  Stir in spinach and simmer 5 minutes uncovered. Serve hot. 
To make this recipe gluten free: Use GF broth and GF flour. Always check all ingredients to be sure they are gluten free.
