Chicken Pasta Salad with Cilantro and Lime

Portion Size: 1  ½ cup (approx. ½ c. chicken, ½ c. pasta and ½ c. vegetables)

Ingredients: Yields: 8 servings

Ingredients Notes: 
16 Oz. package of dried rotini pastaFor vegan: use vegan pasta
1/3 cup lime juice
1/4 cup fresh cilantro leaves
2 Tablespoons olive oil
4 cups chopped meatless cooked chicken or turkey
1 tablespoon honey
1/2 teaspoon salt
1 teaspoon ground cumin
1/2 teaspoon garlic powder
1/4 teaspoon black pepper
1 cup grape tomatoes, quarteredWash and quarter
1 medium red onion, dicedWash, peel and dice
1 yellow bell pepper, dicedWash, trim and dice
1 red bell pepper, dicedWash, trim and dice
1 cup zucchini, dicedWash, trim and dice

1Cook pasta according to package directions. Drain pasta.
2For dressing in a small bowl whisk together lime juice, cilantro, oil, honey, salt, garlic powder, cumin and black pepper.
3In a large bowl combine pasta, chicken tomatoes, red onion, red and yellow peppers and zucchini.  
4Toss gently to coat. Chill until ready to serve.
