Chicken with Mushrooms (meatless)
Portion Size: 3 oz. chicken and 2 T. mushroom sauce

| 2 ½ lbs. meatless chicken pieces | |
| 2 tablespoons cooking oil | |
| 2 cups fresh mushrooms | Washed, trimmed and diced. |
| 1 large bunch of green onions | Washed, trimmed and sliced thin . Including green tops |
| ¼ cup water | |
| ¼ cup low sodium soy sauce | |
| 1 teaspoon garlic powder |

| 1 | Spray a large skillet with nonstick spray. Heat oil in skillet. | |
| 2 | Add chicken and cook over medium heat for 2 to 3 minutes. | Cook until internal temperature of chicken reaches 165 degrees F. |
| 3 | Add mushrooms, green onion, water, soy sauce, and garlic. Cook over medium heat until mushrooms are tender and most of the liquid has evaporated. Spoon sauce over chicken. |
