Garden Chicken and Pasta Salad (meatless)
Portion Size: 1 ½ cups; ½ cup chicken and dressing mixture, ½ cup pasta, ½ cup vegetable
Ingredients: Yields: 8 servings

| 16 oz. package of dried rotini pasta | For vegan: use vegan pasta |
| 2 lbs. meatless chicken | |
| 3 cups broccoli | Washed, trimmed and chopped. |
| 1 red onion | Washed, peeled and sliced. |
| 1 ½ cups light ranch dressing | May use recipe in cookbook for dressing. For vegan: use vegan dressing. |
| 1 red bell pepper | Washed, trimmed and sliced. |
| 1 green bell pepper | Washed, trimmed and chopped. |
| Lettuce leaves | Washed and trimmed |

| 1 | Cook pasta according to package directions. Drain pasta. Rinse with cold water and drain again. | |
| 2 | Cook broccoli in small amount of water in microwave. Drain. | |
| 3 | In a large mixing bowl combine pasta, broccoli, chicken, green pepper, and red onions. Toss with dressing until well coated. | |
| 4 | Cover and chill for 4 hours. | |
| 5 | To serve, arrange the lettuce on salad plates. Stir the pasta mixture and divide mixture among plates. Garnish with red peppers. |
