Hawaiian Chicken Salad (meatless)
Portion Size: ½ c. chicken mixture, 1cup lettuce

1-pound meatless chicken, cubed | |
1 cup light mayonnaise | For vegan: Use vegan mayonnaise |
1 teaspoon salt | |
2 cup pineapple tidbits, packed in 100% juice | Do not drain |
½ cup raisins | |
1 cup blanched slivered almonds, toasted | Unsalted |
8 cups shredded lettuce | Wash, trim and shred. |

1 | In a large bowl, toss the chicken with lettuce. | |
