Lima Beans and Chicken Salad

Portion Size: 1 cup 

Ingredients: Yields: 8 servings

Ingredients Notes: 
4 cups lima beans (frozen)
1 lb. of meatless chicken, diced
1/2 cup of celeryWash, trim and minced
2 tablespoons of onions Wash, peel and minced
¼ cup light  sour cream For vegan: use vegan sour cream 
1 tablespoon of white wine vinegar 
1/4 teaspoon of celery seed Optional

1Cook the lima beans according to directions.
2Drain and rinse with cold water.
3Combine beans with chicken, celery and onions in large bowl. In a small bowl combine sour cream, vinegar, and celery seed. 
4Pour over dressing. Toss to coat. Chill until ready to serve.
