Sweet and Sour Glazed Chicken (meatless)

Portion Size: 4 oz. chicken, ½ cup rice, 2 T. sauce

Ingredients: Yields: 8 servings

Ingredients Notes: 
2 ½ lbs. meatless chicken pieces 
1 cup pineapple preserves
1/4 cup red wine vinegar
2 tablespoons light soy sauce
1/4 teaspoon ginger
1/2 teaspoon onion powder
1/4 teaspoon pepper
8 green onionsWashed, trimmed and sliced 
4 cups cooked brown rice

1For glaze, in a large saucepan stir together preserves, vinegar, soy sauce, ginger, onion powder, and pepper.  Add chicken. Heat through
2Stir green onion into hot cooked rice.  Place rice mixture on a platter.  Place chicken atop; spoon glaze over chicken.Internal temperature should reach 165 degrees F.
