Turkey and Brown Rice Casserole

Portion Size: 1 cup (½ cup meat and ½ cup rice)

2 cups light sour cream
1 cup low sodium chicken or turkey broth
1/4 Teaspoon pepper
1 Teaspoon garlic powder
1 teaspoon thyme
2  1/2 Pounds lean ground turkey
4 cups cooked brown rice
1 cup sliced mushroomsWashed, trimmed and sliced
1 Small onion dicedWashed, peeled and diced
1 tablespoon olive oil
2 cups low fat cheeseSuggestion: cheddar for beef or Swiss for Turkey

1Preheat oven to 350 F. degrees.  
2In a large skillet, heat to medium high heat.  Add ground turkey and cook until browned.  Drain.  Check temperature. Minimum Temperature 165°F for 15 seconds
3Place in a large mixing bowl. In the same large pan, sauté onion and mushrooms in oil until tender.  
4Add onions and mushrooms to ground beef.  
5Stir in sour cream, broth, pepper, garlic powder, thyme and rice.  
6Place mixture into a baking dish.  Top with cheese.
7Bake in preheated oven for 30 minutes.Check temperature 165 F degrees
