Chicken Parmesan Sandwiches

8 (3 oz.) Boneless skin less chicken breasts | Trim all visible fat and skin |
1 cup all-purpose flour | |
2 large eggs | |
1 cup seasoned breadcrumbs | |
¼ cup grated Parmesan cheese | |
8 Small Italian rolls or hamburger buns | |
1 cup marinara sauce | |
8 slices Provolone cheese |

1 | In 3 separate shallow dishes, add flour to one, eggs to another and then breadcrumbs into the 3rd. Stir Parmesan into bread crumb mixture. Beat eggs. | |
2 | Pound chicken with a mallet to ½ inch thickness; Dip chicken flour and coat both sides; shake off excess. Dip in egg, then in crumb mixture. | |
3 | In a large skillet heat oil over medium heat. Add chicken; cook until golden brown and chicken is no longer pink. | Cook until internal temperature reaches 165°F. |
4 | Heat marinara sauce in microwave until hot. | |
5 | To assemble, place 1 chicken breast on bun. Top with marinara sauce and then cheese. Serve warm. |
