Hawaiian Chicken Salad

Portion Size:  ½ c. chicken mixture, 1cup lettuce

Ingredients: Yields: 8 servings

Ingredients Notes: 
1-pound cooked chicken, cubedTrim all visible fat and skin
1/2 cup light mayonnaise
1 teaspoon salt
1 cup pineapple tidbits, packed in 100% juiceDo not drain
½ cup raisins
1/4 cup blanched slivered almonds, toastedUnsalted 
8 cups shredded lettuceWash, trim and shred.

1In a large bowl, toss the chicken with lettuce.
2Mix the mayonnaise, salt, pineapple, raisin, and almonds.
3Serve ½ cup chicken mixture on top of 1 cup lettuce.
4Chill until serving.
