Strawberry Coconut Soup (chilled dessert)

Portion Size: 1 cup

Ingredients Notes: 
16 oz. Strawberries (fresh or frozen)Washed, trimmed and chopped
2 cups vanilla yogurt 
1 cup light sour cream 
½ cup orange juice
½ teaspoon lemon juice
½ cup coconut milk 
2 teaspoons cinnamon
1 tablespoon vanilla 
¼ cup mint (garnish)(optional)Washed, trimmed and chopped
½ teaspoon orange zest (garnish)(optional)

1Combine in large a large bowl strawberries, yogurt, sour cream, orange juice, lemon juice, coconut milk, cinnamon and vanilla.  Puree in a food processor or blender in processor.
2Chill for all least 2 hours.   
3Serve in chilled bowls and garnish with mint and orange zest.
