Green Bean Salad

| 4 cups green beans | Trimmed |
| 1 Tablespoon olive oil | |
| 3 teaspoons lemon juice | |
| 1 teaspoon lightly packed lemon zest | |
| 1 medium onion | Peeled, washed, and thinly sliced |
| 1/2 cup thinly sliced cured pitted black olives | |
| 2 Tablespoons finely chopped parsley | Washed and finely chopped or 2 t. dried parsley |

| 1 | In a large microwaveable dish add green beans and 2 Tablespoons of water. | |
