Green Bean Salad

4 cups green beansTrimmed 
1 Tablespoon olive oil
3 teaspoons lemon juice
1 teaspoon lightly packed lemon zest
1 medium onionPeeled, washed, and thinly sliced
1/2 cup thinly sliced cured pitted black olives
2 Tablespoons finely chopped parsleyWashed and finely chopped or 2 t. dried parsley

1In a large microwaveable dish add green beans and 2 Tablespoons of water.  
2Heat covered on high until tender.(About 7 minutes)
3In a medium bowl, thoroughly mix olive oil, juice, and zest; season well with salt and pepper.
4Add green beans, onions, olives, and parsley, and mix well; taste, adjust seasoning as needed.
5Chill.
