Citrus Parmesan Dressing

Portion Size: 2 Tablespoons

Ingredients: Yields:  1 cup

Ingredients Notes: 
1/3 cup  grated Parmesan cheese

Zest and juice of 2 oranges
Washed, zested and juice removed.
2 tablespoons chopped shallots
 or minced red onionWashed, peeled and minced
1/2 cup extra-virgin olive oil (or half reg. + half lemon oil)

2T white wine vinegar

½ teaspoon salt 
¼ teaspoon pepper
For gluten free (GF): No changes. Always check each ingredient to be sure it is gluten free.

1Place all ingredients in a blender.  Blend until smooth
2Serve immediately or refrigerate.
