Pork Chop with Fresh Plum Sauce
Portion Size: 3 oz. boneless, 5 oz. with bone

8 boneless pork chops, ½ inch thick | Trim all visible fat |
½ teaspoon salt | |
1/4 teaspoon pepper | |
1 teaspoon coriander seeds, crushed | |
1 Tablespoon oil | |
½ teaspoon ground ginger | |
2 Tablespoon cider vinegar | |
2 Tablespoon brown sugar | |
2 lbs. fresh ripe plums | Wash, cut in halve and remove pit. Chop into ½ inch pieces. May use peaches if plums not available |
1 sweet onion, diced | Wash, peel and dice |

1 | In a medium saucepan, heat oil until hot. Add 1 tsp. oil. Cook coriander and mustard seeds in oil on high until mustard seeds begin to pop, about 1 minute | |
2 | Remove from heat. | |
3 | Stir in ginger, vinegar, brown sugar, and set aside. | |
4 | Place pork chops in baking dish and season with salt and pepper. Bake for 30 minutes. | |
5 | Remove from oven. Turn over pork chops and spread . Continue baking about 30 minutes or until internal temperature reaches 145 °F with a 3 minute rest. | Cook until internal temperature reaches 145 ° F for 15 seconds. |
6 | In small pan heat 1 tsp. oil. Add onion and cook until translucent. | |
7 | Add plums and sauté until slightly browned. Add spices to plums. Serve hot over pork chops. |
