Pork Chop with Mushrooms
Portion Size: 3 oz. boneless, 5 oz. with bone

| 8 boneless pork chops, ½ inch thick | Trim all visible fat |
| 1 teaspoon salt | |
| ½ teaspoon black pepper | |
| 1 tablespoon plus 3 tablespoons olive oil | |
| ¼ cup flour | |
| 12 oz. sliced mushrooms | Washed, trimmed and sliced |
| 1 teaspoon thyme | |
| 2 cups low salt chicken broth |

| 1 | Season chops with salt and pepper. | |
| 2 | Heat 1 T. oil in large skillet over medium high heat. Brown chops, 7-8 minutes per side. | Cook until internal temperature reaches 145° F for 15 seconds. |
| 3 | Remove chops from pan and add flour and 3T. oil. Stir and cook for 1 minute | |
| 4 | Whisk in chicken broth and bring to boil. | |
| 5 | Add chops, mushrooms and thyme and simmer 12-15 minutes. Puree mushroom sauce. | |
| 6 | Serve chops and pour sauce on top. | Serve hot. |
