Pork Tenderloin Medallions

| 2 lbs. boneless pork tenderloin | Trim all visible fat, Thinly slice into thin slices across the grain. |
| 1/4 cup olive oil | Or vegetable oil |
| 1 teaspoon garlic salt | |
| 1 teaspoon pepper |

| 1 | Season Meat with garlic salt and pepper | |
| 2 | Heat oil to medium high heat. | |
| 3 | Add pork slices | |
| 4 | Cook for 2 minutes until slightly brown | DO NOT OVER COOK |
| 5 | Turn slices and cook until brown | Heat to at least 145 degree with 4 minute rest |
6 | Slice thinly across the grain and serve. |
