Beef Tostada (Meatless)
Portion Size: 1/3 c. ground meat, 1/4 c. refried beans, 1 tortilla, ¼ cup tomatoes and, ½ cup lettuce each.

| 1 Pounds imitation ground beef crumbles | |
| 2 Cans fat free refried beans (no lard) | |
| 1 Small can Ortega chili peppers, drained | |
| 2 Cups shredded low fat cheddar cheese | For Vegan: Use vegan cheese |
| 2 Cups tomatoes, chopped | |
| 4 Cups shredded lettuce | |
| 8 Flour tortillas ( lard in ingredients, plant based only products) | |
| Taco sauce (optional) (plant based ingredients only) |

| 1 | Prepare flour tortillas by frying them in hot vegetable oil until crisp tender, turning once. | |
| 2 | Drain on a paper towel. | |
| 3 | In a large sauce pan, heat ground beef. | Cook until internal temperature reaches 165 F degrees for 15 seconds |
| 4 | Mix canned refried beans with Ortega chili peppers, heat through. | |
| 5 | Place bean mixture on prepared tortillas. | |
| 6 | Top each with meat and then cheese. | |
| 7 | Top with chopped lettuce and tomatoes. | |
| 8 | Sprinkle with taco sauce. |
