Chicken Breast with Cranberry Apple Sauce (meatless)

2 ½ lbs. Meatless chickenTrim all visible fat
1 teaspoon salt
½ teaspoon black pepper
¼ cup oil
1 cup apple cider or juice
1 cup cranberry sauceMay use gelled canned.
¼ cup honey
½ cup orange juice concentrate, thawed
1 teaspoon ground ginger

1In a large nonstick skillet, heat oil over medium high heat.
2Heat Chicken and season with salt and pepper.
3Add apple cider
4Cover and simmer for 8 minutesCook to 165 F for 15 seconds for Chicken
5In a small bowl combine cranberry sauce, honey, orange juice concentrate and ginger.
6Pour sauce over chicken.
7Cook for 1-2 minutes until heated through
