Chicken in Hawaiian Sauce (meatless)

Portion Size: ¾ cup; ½ cup chicken with ¼ cup sauce

Ingredients: Yields: 8 servings

Ingredients Notes: 
1 cup pineapple juice
1/2 cup packed brown sugar
1/3 cup light soy sauce
2 tablespoons cornstarch
2 ½ pounds meatless chicken Cut into 1-inch pieces.

1In a small bowl combine pineapple juice, cornstarch, brown sugar and soy sauce.
2In a large pan heat oil to medium high heat. Add chicken and heat through.
3Pour sauce over chicken and bring to boil. Reduce heat. Reduce heat.  Simmer 20-25 minutes. Cook until internal temperature reaches 165 degrees.
