Chicken in Hawaiian Sauce (meatless)

1/3 cup light soy sauce | |
2 tablespoons cornstarch | |
2 ½ pounds meatless chicken | Cut into 1-inch pieces. |

1 | In a small bowl combine pineapple juice, cornstarch, brown sugar and soy sauce. | |
2 | In a large pan heat oil to medium high heat. Add chicken and heat through. | |
3 | Pour sauce over chicken and bring to boil. Reduce heat. Reduce heat. Simmer 20-25 minutes. | Cook until internal temperature reaches 165 degrees. |
