Chicken with Mushrooms (meatless)

Portion Size:  3 oz. chicken and 2 T. mushroom sauce

Ingredients: Yields: 8 servings

Ingredients Notes: 
2 ½ lbs. meatless chicken pieces
2 tablespoons cooking oil
2 cups fresh mushroomsWashed, trimmed and diced.
1 large bunch of green onionsWashed, trimmed and sliced thin . Including green tops
¼ cup water
¼ cup low sodium soy sauce
1 teaspoon garlic powder

1Spray a large skillet with nonstick spray.  Heat oil in skillet.
2Add chicken and cook over medium heat for 2 to 3 minutes. Cook until internal temperature of chicken reaches 165 degrees F.
3Add mushrooms, green onion, water, soy sauce, and garlic.  Cook over medium heat until mushrooms are tender and most of the liquid has evaporated. Spoon sauce over chicken.
