Mediterranean Tuna Orzo Salad
Portion Size: 2 cups (1 cup tuna/ orzo and 1 cup spinach)

4 cups water packed tuna, drained and flaked | |
8 cups baby fresh spinach, washed | Wash and trim |
1 red bell pepper, finely chopped | Wash, trim and finely chop |
2 medium tomatoes, diced | Wash, trim, and dice |
4 green onions with tops, chopped | Wash, trim and chop |
1 lb. package orzo | May use whole grain pasta |
1 can (15 oz.) garbanzo beans, rinsed and drained | Low-Sodium Canned Garbanzo beans |
1/4 cup olive oil | |
½ cup Red Wine vinegar | |
2 tablespoons dried parsley | Or ¼ cup fresh parsley finely chopped |
2 clove garlic, minced | |
2 tablespoons Dijon mustard | |
1/2 teaspoon salt | |
1/4 teaspoon pepper | |
4 oz. low fat feta cheese |

1 | Prepare Orzo according to the directions on the package; Drain. | |
2 | In a small bowl whisk together, olive oil, red wine vinegar, parmesan, parsley, garlic, Dijon mustard, salt and pepper. | |
3 | In a large bowl, add orzo, tuna flakes, bell pepper, green onion, tomato and garbanzo beans. | |
4 | Drizzle with dressing and gently toss to coat. | |
5 | On serving plate add baby spinach and top with tuna mixture. Top with feta cheese. Serve cold. |
