|2 lb.s boneless skinless chicken breast or thighs
2 T. cooking oil
2 cups fresh mushrooms
1 large bunch of green onions, sliced
¼ c. water.
¼ c.lite soy sauce
1 t. garlic powder
|Spray a large skillet with nonstick spray. Heat oil in skillet. Add chicken and cook over medium heat for 2 to 3 minutes or until tender and no pink remains. Transfer to a platter; keep warm. In the large skillet add mushrooms, green onion, water soy sauce, and garlic. Cook over medium heat until mushrooms are tender and most of the liquid has evaporated. Spoon sauce over chicken Serves 8.|
