Kielbasa and Potato Bake

2 Pounds Rings turkey sausage (Kielbasa), sliced diagonally
2 cans fat free condensed milk
2 tablespoons flour
1 (8oz.) fresh mushrooms, sliced
1 red bell pepper, diced
1 tablespoon oil
1 small onion, diced
1 T. minced garlic
3 cups milk
½ t. black pepper
4 cups russet potatoes, peeled and cubed
2 cups lowfat cheddar cheese
Preheat oven to 375 degrees. In a large pan, saute onion, mushroom, bell pepper and garlic in oil. In a large mixing bowl, mix together evaporated milk, garlic, flour and pepper. Stir in Potatoes and kielbasa. Spoon the mixture into a large casserole dish. Top with cheese. Bake for 1 ½ hours, or until potatoes are tender. Serves 8.
