Kielbasa, Sauerkraut and Red Potato Stew

| 2 pounds lean kielbasa | Sliced |
| 2 cups sauerkraut | Drained and diced |
| 2 Granny Smith apples | Washed, peeled, cored and diced |
| 1 medium onion | Washed, peeled, and chopped fine |
| 2 pounds red potatoes | Washed, trimmed and quartered |
| 1 1/2 cups low sodium chicken broth | |
| 1/2 teaspoon caraway seeds | |
| 1/2 cup low fat Swiss Cheese |

| 1 | In a large stock pot, cook kielbasa until lightly browned. | |
| 2 | Add the sauerkraut. | |
| 3 | Cover with apples, onions, potatoes, and chicken broth. | |
| 4 | Sprinkle on caraway seeds. | |
| 5 | Cover and bring to boil. Cook for 40 minutes or until potatoes are tender. | Cook until internal temperature reaches 165 F. |
| 6 | Serve in a bowl. Top with Swiss cheese. |
