Kielbasa, Sauerkraut and Red Potato Stew

Portion Size: 1 cup

Ingredients Notes: 
2 pounds lean kielbasaSliced
2 cups sauerkrautDrained and diced
2 Granny Smith applesWashed, peeled, cored and diced
1 medium onionWashed, peeled, and chopped fine
2 pounds red potatoes Washed, trimmed and quartered
1 1/2 cups low sodium chicken broth
1/2 teaspoon caraway seeds
1/2 cup low fat Swiss Cheese

1In a large stock pot, cook kielbasa until lightly browned. 
2Add the sauerkraut.
3Cover with apples, onions, potatoes, and chicken broth.
4Sprinkle on caraway seeds.
5Cover and bring to boil. Cook for 40 minutes or until potatoes are tender.Cook until internal temperature reaches 165 F. 
6Serve in a bowl. Top with Swiss cheese.
