Ingredients Notes:
3 ½ -4 lbs boneless pork tenderloin Trim all visible fat
½ cup olive oil Or vegetable oil
3 Tablespoons lemon juice
2 Tablespoons grated lemon peel
6 garlic cloves, mince
2 Tablespoons dried oregano
1 teaspoon salt
1 teaspoon pepper

1 In a re sealable plastic bag, combine, oil, lemon juice, lemon peel, oregano, salt and pepper. Add Pork and Marinade for 4- 8 hours
2 Heat oven to 450 degrees
3 Remove pork from marinade. In a large spray with nonstick cooking spray and add pork. Discard marinate
4 Do not cover and do not add liquid.
5 Add roast to oven and immediately reduce heat to 325 degrees
6 Roast 25 to 35 minutes to the pound.
7 A rolled roast or boned roast requires 5 to 10 minutes longer to the pound Heat to at least 145 degree with 4 minute rest
8 Slice thinly across the grain and serve.
 
Notes:
Time Temperature Sensitive food. Food safety Standards: hold food for service at an internal temperature above 140 degrees F. Do not mix old product with new. Cool leftover product quickly (within 4 hours) to below 41 degrees F. Follow proper cooling procedures. Reheat leftover product quickly (within 2 hours) to 165 degrees F for 15 seconds.
