Applesauce Bread

| 3/4 cup applesauce | |
| 1/4 cup honey | |
| 1 egg white | |
| 1/2 Teaspoon vanilla | |
| 1 cup all-purpose flour | |
| 1/4 cup rolled oats | |
| 1/4 cup wheat germ | |
| 1/2 teaspoon baking soda | |
| 1/2 teaspoon baking powder | |
| 1/4 teaspoon salt | |
| 1/2 teaspoon cinnamon | |
| 1/4 teaspoon nutmeg | |
| 1/2 cup raisins (optional) |

| 1 | Preheat oven to 350 degrees. | |
| 2 | In a large mixing bowl beat together the applesauce, honey, egg whites, and vanilla. | |
| 3 | Combine the dry ingredients in a separate bowl. | |
| 4 | Add dry ingredients to applesauce mixture and mix just until moist. Do not over mix | |
| 5 | Fill greased muffin tins 2/3 full and bake at 350 degree oven for 15 to 20 minutes | Store in air tight container for up to 72 hours. May freeze for up to 30 days |
