Applesauce Bread

Portion Size: 1 slice bread

Ingredients: Yields: 8 servings

Ingredients Notes: 
3/4 cup applesauce
1/4 cup honey
1 egg white
1/2 Teaspoon vanilla 
1 cup all-purpose flour
1/4 cup rolled oats 
1/4 cup wheat germ
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1/2 cup raisins (optional)
For gluten free (GF): Use GF all purpose flour, GF oats and GF baking powder. Omit the wheat germ. Always check each ingredient to be sure it is gluten free.

1Preheat oven to 350 degrees.
2In a large mixing bowl beat together the applesauce, honey, egg whites, and vanilla.
3Combine the dry ingredients in a separate bowl.
4Add dry ingredients to applesauce mixture and mix just until moist. Do not over mix
5Fill greased muffin tins 2/3 full and bake at 350 degree oven for 15 to 20 minutesStore in air tight container for up to 72 hours.  May freeze for up to 30 days
