Banana Bread

| 1 3/4 cup flour | |
| 2/3 cup sugar | |
| 2 teaspoons baking powder | |
| 1/2 teaspoon baking soda | |
| 1/2 teaspoon salt | |
| 1 cup mashed ripe bananas | |
| 1/3 cup margarine | |
| 2 tablespoons nonfat milk | |
| 2 eggs | |
| 1/4 cup chopped nuts | (optional) |

| 1 | In a large mixer bowl combine 1 cup of the flour, the sugar, baking powder, baking soda, and salt. | |
| 2 | Add mashed banana, margarine, and milk. | |
| 3 | Beat with an electric mixer on low speed till blended, then on high speed for 2 minutes. | |
| 4 | Add eggs and remaining flour and beat till blended. | |
| 5 | Stir in nuts. | |
| 6 | Pour batter into a loaf pan sprayed with nonstick spray. | |
| 7 | Bake in a 350 degree oven for 55 to 60 minutes or till a toothpick inserted near the center comes out clean | |
| 8 | Cool for 10 minutes on a wire rack. | |
| 9 | Remove from the pan. | Store in air tight container for up to 72 hours. May freeze for up to 30 days |
