Baked Acorn Squash

Portion Size: ½ cup squash

Ingredients:     Yields: 8 servings

2 medium acorn squash, halved and seededWashed, halved and seeded.
1 tablespoon olive or canola oil           
2 tablespoons brown sugar

1Preheat oven to 350 °F. 
2Turn acorn squash upside down onto a cookie sheet. 
3Bake in a 350°F oven until it begins to soften, approximately 30 to 45 minutes. 
4Remove squash from the oven and turn onto a plate so that the flesh is facing upwards. 
5Place oil and brown sugar into the squash, and place remaining squash over the other piece. 
6Place squash in a baking dish so the squash won’t slide around too much while baking. 
7Place squash in the 350°F oven and bake another 30 minutes.Cook until internal temperature reaches 135°F.

Variations: Acorn Squash can be steamed, braised, microwaved, roasted, stir fry. May add choice of herbs or spices for flavor.
