Bok Choy Salad

Portion Size: 1/2 cup

Ingredients: Yields: 8 servings

Ingredients Notes: 
1/2 cup olive oil
1/4 cup white vinegar
1/3 cup white sugar
3 tablespoons soy sauce
4 bunches baby bok choyWash, trimmed and finely sliced.
1 bunch green onionsWash, trimmed and chopped.
1/4 cup slivered  unsalted almonds, toasted

1In a small bowl, whisk together olive oil, white vinegar, sugar, and soy sauce.
2Combine the bok choy, green onions, and almonds, in a salad bowl. Chill until ready to serve. 
3Toss with dressing, and serve.
