Broccoli and Tortellini Salad

Ingredients: Yields: 8 servings

Ingredients Notes: 
3 1/2 cups fresh broccoli flowerets Washed, trimmed and chopped
20 oz. fresh cheese filled tortellini 
½ cup light mayonnaise 
2 teaspoons sugar 
2 teaspoons cider vinegar
1/2 cup raisins
1 red onionWashed , peeled and finely chopped 
6 slices baconCooked crisp and crumbled or ¼ cup bacon bits

1Cook tortellini to directions on the package. Cook until internal temperature reaches 135°F.
2Drain and rinse under cold water. 
3In a small bowl, mix together mayonnaise, sugar and vinegar to make the dressing. 
4In a large bowl, combine broccoli, tortellini, bacon, raisin, and red onion. 
5Pour dressing salad and toss. Chill for two hours.
